Tonight's dinner: Lentil and Sausage Soup with French Bread.



INGREDIENTS:
2 teaspoons olive oil
2 carrots, thinly sliced
1 onion, diced
2 garlic cloves, minced
1/4 pound turkey kielbasa, thinly sliced
1-1/4 cups brown lentils, picked over and rinsed
5 cups water
1 (14-1/2) can diced tomatoes
1/2 teaspoon salt
1/4 teaspoon black pepper

DIRECTIONS:
Heat the oil in a large saucepan over medium heat. Add the carrots, onion, and garlic; cook, stirring frequently, until softened, about 5 minutes.

Add the kielbasa, lentils, and water; bring to a boil. Reduce the heat and simmer until the lentils are tender, about 30 minutes.

Stir in the tomatoes, salt, and pepper. Simmer until heated through, about 5 minutes longer.

This will serve four people and takes 15 minutes to prep and 40 minutes to cook.

Even though this is from Weight Watchers, it doesn't taste like it is from Weight Watchers. They actually have the best recipes that are full of flavor and not fat.

A little St. Patrick's Day comedy.

Chicken is what's for dinner on St. Patty's Day!


I know that it is part of the St. Patrick's Day tradition to eat corned beef, cabbage, and potatoes, but I thought I would be a rebel this year and make Chicken with Mushrooms and White Wine. Today was the first time that I made this dish, and my husband said it was great and tasted a little bit like stuffing. I didn't find that to be true, but it was a very good dish. Helpful tip!

During tough times, it can be difficult to keep up with your busy schedule and plan out dinner. I know that many families are trying not to go out to eat right now because of the cost, but sometimes you can forget and get caught up in everything else and just resort to a quick, fast-food or restaurant dinner. Therefore, I suggest to create a menu at the beginning of each week of what you are going to make each night. Break the grocery list down by day so that when you are going to the grocery store, you know which day you are shopping for. That way if you decide to not make dinner one night, you know which ingredients go to which day. Remember, if you are also interested in coupons, separate them ahead of time to make sure you do not forget to use them!
